The Black Cats are one point above the relegation zone after Saturday’s 4-0 home defeat by Aston Villa.
Saturday’s defeat pitted the manager against a section of the club fans who accosted the manager on his way down the tunnel.
Poyet met chief executive Margaret Byrne as well as other board members after taking training on Monday but the club decided to part company with him.
The Uruguayan had taken over as manager from Paolo di Canio in October 2013 with the club bottom of the top flight and helped the club escape relegation.
